This is a meal that I made a couple of weeks ago. It took me a good while to think of a name for it & the measurements, since it’s something that I just “made up”. I love all of these ingredients separately, so I decided to throw them together. Anytime I crave baked seafood, I know I want to add cheese & spinach. That in itself is a good meal. I also NEVER measure when cooking, so it was very difficult to write this post. But here goes:
Ingredients:
1 – 1lb box of penne pasta
1 – tub Philadelphia Cream Cheese – Savory Garlic
1 – 16oz Ragu Classic Alfredo Sauce
1 – 8oz shredded mozzarella cheese
1 – box frozen spinach (thawed & drained)
1 – large onion (diced)
8 – baby bella mushrooms (cleaned/sliced)
1 – tomato (seeded/diced)
4 – stalks of green onion (diced)
1/2 tsp of garlic powder
1/2 tsp onion powder
1/2 tsp black pepper
2 tbsp of butter
1 1/2lbs of shrimp (peeled/deveined)
parmesan cheese

Dice/slice the onion, tomato, mushrooms, and green peppers. Set the tomatoes aside.
Saute mushrooms & onions in olive oil, then add in the green onion. Saute for a few minutes longer & remove from pan.
Next, add the spinach (to the same pan) & saute with 1 tablespoon of butter. Remove & set aside.
Using the other tablespoon of butter, saute the shrimp for a few minutes until slightly pink. Remember, we will be finishing this dish in the oven, so don’t leave them in the pan too long. Remove & set aside.
*now is the time to cook your pasta (just shy of al dente) drain & set aside.
Add the jar of Alfredo sauce to the pan. Then add in the garlic powder, onion powder, & black pepper.
Next, whisk in the Philly cream cheese
Add in 1/2 of the mozarella cheese. Then add all ingredients to the cheese mixture & give it a stir.
Spray your baking dish with non stick cooking spray & add the mixture to the pan. Top with the remaining cheese & sprinkle on the parmesan cheese.
Bake for 15 minutes, uncovered.
