So, I have another recipe for you guys! First of all, I want to say that I’m in LOVE with Pinterest. If you don’t pin, you should definitely start. You can follow all of my pins here. Also, if you are on Pinterest, leave your links in the comment section so that I can follow you back! You can find anything on that site. That’s where I came across this Baked Eggs recipe. Of course, I didn’t follow the recipe to the T. I did a variation & added my take on it. Hope you enjoy!

Preheat your oven to 375 degrees.
Crack 2 eggs into each buttered ramekin

Salt & Pepper the eggs. Then add 1 tbsp of heavy whipping cream to each ramekin.

Sprinkle on the spinach, bacon, feta, and scallions (save a little bit of scallions for garnishing)

Top with parmesan cheese & place the ramekins on a baking sheet. Bake for 10-15 minutes until the eggs have achieved the desired doneness.

This was AH-MAZING! I served mine with a buttered/toasted bagette!

* I think the next time I cook this dish, I will switch out the feta for asiago cheese. I wanted a cheesier consistancy which wasn’t achieved with feta*
Ingredients
- 4 eggs
- 1/4 cup Parmesan cheese, grated
- 6 strips bacon, cooked and crumbled
- 1/2 cup spinach, sautéed
- 1/4 cup of Feta cheese (basil & tomato blend)
- 2 tbsp heavy whipping cream
- 1 tbsp butter, softened
- salt and pepper to taste
Instructions
Heat oven to 375°F. Place the feta cheese, scallions, bacon, and sauteed spinach on a plate for easy assembly. Butter two ramekins. Crack two eggs into each ramekin. Salt & pepper the eggs. Pour 1 tbsp of heavy cream into each ramekin. Sprinkle bacon, spinach, and feta cheese over the eggs. Top with grated parmesan cheese. Place on a baking sheet. Bake the eggs for 10-15 minutes until the eggs have achieved desired doneness: less time for runny yolks, more time for firm yolks.
