Eating with Prissy: Grilled Chicken Burritos w/Corn & Black Bean Salsa

Many of you may not know this about me, but I LOVE to cook. To be honest, I love cooking more than fashion. Maybe even more than shoes….*gasp*!!!! Did I just say that out loud?? LOL!  I will watch Food Network or The Cooking Channel before I’d watch a Fashion Show, yet I have a fashion blog! Crazy, right?? If you are my Facebook friend, you know that I have lots of pictures of dishes that I’ve made.  And if you’re a close friend of mine, you’ve eaten some of those meals! I’ve decided to share some of those meals with my blogger friends as well. I’m going to start posting recipes of some of the meals that I make, so I hope you enjoy!

Chicken Seasoning (for 5 chicken breasts):
1 tbsp of garlic powder
1 tbsp of onion powder
1 tbsp of black pepper
1 1/2 tbsp of Lawry’s seasoning salt
1/4 tsp of ground cumin
a few dashes of cayenne pepper

I combine all ingredients into a bowl, and then season chicken breasts

Grill chicken, allow to rest for 5-10 minutes, cut into strips.

Black Bean & Corn Salsa Ingredients:
1 can of fiesta corn (drained)
1 can of seasoned black beans (drained, rinsed)
1 Lime (zest & juice)
1 large tomato (seeded)
1/2 red onion
1/2 jalapeno pepper (seeded)
2 tbsp honey
1 tbsp olive oil
salt & pepper to taste
(some people add cilantro, but I’m not a HUGE fan of it)

Dice the onion & tomato into small pieces
Finely chop the jalapeno pepper
(there’s nothing worse than biting into big chucks of peppers)

Add the corn, beans, tomatoes, onions, and jalapeno to a bowl   

Next add honey, olive oil, lime zest & juice, and salt & pepper

Give it all a stir, and refrigerate your salsa for 30 minutes
(you can make the salsa while the chicken breasts are on the grill)

Time to assemble. I used a flour burrito & added fat-free miracle whip as a base. I also love using mayo, ranch, salsa, sour cream….anything!! LOL!  I layered all of my toppings on the burrito, folded it, and cut it in half! Oh & I had some leftover rice from the day before, so I added a little bit of that too!
You could also omit the burrito & use cilantro rice (or plain rice) as your platform to pile on all of your toppings! Maybe saute onions & bell peppers to add to the mix. The toppings are endless!

    The honey and lime zest just took me from hungry to salivating!! OMG girl this looks bomb! I am a HUGE Chipotle fan and this looks like it would fit right in there! I feel like most of us fashion bloggers are also cooks and interior decorators….somehow they all mesh! lol Kiah

    I love mexican dishes. I only cook fish and shrimp for the fam which can easily be substituted here. I will be trying this out THIS week:) Oh yes expect to hear my review this weekend, lol:) Keep them coming.
